Cocoa Cashew Cookies

Ingredients

1 tablespoon coconut oil

2 tablespoon Natvia

1.5 cup raw cashews

1 cup unblanched almond flour

0.25 teaspoon salt

0.5 teaspoon vanilla extract

0.125 teaspoon cinnamon

1 teaspoon cocoa powder

0.5 teaspoon cinnamon

Method

  1. Combine cashews, coconut oil, almond flour, salt, vanilla and cinnamon in small food processor or blender.
  2. Keep mixing until you have cookie dough consistency
  3. Roll into balls and flatten slightly
  4. Wrap and keep in freezer for 30 minutes
  5. In a plastic bag mix together cocoa and cinnamon
  6. Shake cookies in bag until fully covered with topping and enjoy!
  7. For storage: cover and keep in refrigerator or freezer
