Berry Almond Cake

Makes 12 slices

Ingredients

8 egg whites

0.66 cup gluten free flour

1 cup almond flour

1 cup Natvia

1 teaspoon vanilla extract

0.5 cup butter, melted

2 cup mixed berries 

Method

  1. Preheat oven to 180°C and grease a round cake pan.
  2. Whisk the egg whites until stiff peaks form.
  3. Fold in gluten free flour, almond flour, and Natvia.
  4. Gently add in vanilla extract and butter.
  5. Fold in mixed berries.
  6. Pour into prepared pan and bake for 30-40 minutes until a toothpick comes out clean.
