Peanut Banana Cups

Ingredients

1 ripe banana

1 tbsp Natvia

1/2 cup natural peanut butter

2 tbsp coconut oil, melted

1/4 tsp vanilla extract

 

 

Cups:

200g sugar free dark chocolate

1 tbsp Natvia

1 tbsp coconut oil, melted

Peanuts for garnish

Method

  1. Add 1 ripe banana to a mixing bowl, as well as 1 tbsp Natvia, 1/2 cup peanut butter, 1/4 tsp vanilla essence, and 2 tbsp coconut oil.
  2. Melt in the microwave for 30 seconds.
  3. Mix these ingredients with a stick blender.
  4. When smooth, set aside.
  5. Melt 200g sugar free dark chocolate.
  6. Add 1 tbsp of Natvia, and 1 tbsp of coconut oil whilst melting.
  7. Remove from heat and line a muffin tray with muffin cups.
  8. Add a spoonful of chocolate into each of the muffin cups.
  9. Then add a spoonful of peanut mixture into each of the cups.
  10. Add another spoonful of chocolate and seal the cups.
  11. Top with peanuts and place the cups in the freezer to set.
